Oatmeal Krispie Coconut Chocolate Chip Cookies {Recipe}

I usually make donuts every Sunday through the live streaming app, Meerkat. This week, with Father's Day, I decided to change it up and make my dad's favorite cookies. These cookies were built on his love of oatmeal rice krispie cookies. Over the years, this recipe has taking a mind of it's own to include chocolate chips and coconut. In addition, this recipe is made with Splenda white and Splenda brown sugar. Feel free to play around with the ingredients to find a combination that fits you. For example, I eliminated the chocolate chips and coconut to make simple oatmeal krispie cookies for my grandmother.

Oatmeal Krispie Coconut Chocolate Chip Cookies {Print This Shit!}

Notes: this recipe makes a lot of cookies about 4 dozen, and it only takes about 30 minutes in total to throw together. To make less cookies split the recipe in half.

Cookies Ingredients:

  • 1 cup butter soften

  • 1 cup Splenda (or sugar)

  • 1 cup Splenda Brown Sugar (or brown sugar)

  • 2 Eggs

  • ½ teaspoon baking powder

  • 1 teaspoon baking soda

  • dash of cinnamon

  • 1 teaspoon vanilla

  • 2 cups oatmeal (Quaker)

  • 2 cups Rice Krispies

  • 1 cup unsweetened coconut

  • 2 cups almond flour

  • 1 cup dark chocolate

Preheat the oven to 350 degrees and use a cookie sheet. In a bowl mix together the butter, splenda, brown sugar splenda, eggs, vanilla. In a medium bowl mix the dry ingredients - flour, baking powder, baking soda, cinnamon. Slowly mix dry ingredients into wet ingredients. Add in oatmeal, rice krispies, coconut and chocolate chips. Using a cookie scoop or spoon, place on the cookie sheet. Bake for 10 - 12 minutes or until golden brown.
